These tacos will turn even the biggest doubter into a cauliflower taco snob.
Preheat your oven to 400 degrees and chop one head cauliflower into bite sized florets.
In a saucepan heat the following ingredients together, bringing to a boil. Once boiled, add your cauliflower florets for about 2 minutes and then drain.
1/2C vegetable broth
lime juice from half a lime
1 1/2T tamari
1 1/2T hot sauce
1 to 2 garlic cloves, sliced
Next, take your cauliflower and add to a bowl with the following rub ingredients and mix thoroughly until florets are coated. Then add to a lined oven pan and cook for 20-minutes, flipping once.
1 1/2 t chili powder
1t smoked paprika
1/4t ground cumin
1/4t garlic powder
salt
1T olive oil
1/2 yellow onion, chopped
Salsa:
3 tomatoes, chopped
1/2 onion, chopped
Juice from 1/2 lime
1T olive oil
1T apple cider vinegar
Salt and pepper
optional toppings:
sliced jalapenos
1 avocado, sliced
cabbage (pickled or fresh)
hot sauce, cilantro, feta
Add all ingredients to corn tortillas (makes about 6) and devour.
